Grandma's Spicy Zucchini Bread
This is Lindsey's grandma's zucchini bread recipe. It's the kind that shows up in summer when someone has too much zucchini and a loaf pan handy.

Ingredients
Wet Ingredients
- 3 large eggs
- 2 cups sugar
- 1 cup salad oil
- 2 tsp vanilla
- 2 cups shredded zucchini
- 8 ¼ oz crushed pineapple, drained (8.25 oz can)
- 1 cup walnuts (optional)
Dry Ingredients
- 3 cups unsifted flour
- 2 tsp baking soda
- 1 ½ tsp cinnamon
- ¾ tsp nutmeg
- ½ tsp baking powder
Instructions
- 1.Preheat the oven to 350°F. Grease and flour two 8×4 loaf pans.
- 2.In a bowl, sift together the flour, baking soda, cinnamon, nutmeg, and baking powder. Set aside.
- 3.In a large mixing bowl, beat the eggs until frothy.
- 4.Add the oil, sugar, and vanilla, then beat until the mixture becomes thick and slightly foamy.
- 5.Stir in the shredded zucchini.
- 6.Add the crushed pineapple, walnuts (if using), and the flour mixture, stirring until everything is well combined.
- 7.Pour the batter into the prepared loaf pans.
- 8.Bake for about 1 hour, or until a toothpick inserted into the center comes out clean.
