Grandma's Spicy Zucchini Bread
This is Lindsey's grandma's zucchini bread recipe. It's the kind that shows up in summer when someone has too much zucchini and a loaf pan handy.

- Preheat the oven to 350°F. Grease and flour two 8×4 loaf pans.
- In a bowl, sift together the flour, baking soda, cinnamon, nutmeg, and baking powder. Set aside.
- In a large mixing bowl, beat the eggs until frothy.
- Add the oil, sugar, and vanilla, then beat until the mixture becomes thick and slightly foamy.
- Stir in the shredded zucchini.
- Add the crushed pineapple, walnuts (if using), and the flour mixture, stirring until everything is well combined.
- Pour the batter into the prepared loaf pans.
- Bake for about 1 hour, or until a toothpick inserted into the center comes out clean.
