Grandma's Spicy Zucchini Bread

This is Lindsey's grandma's zucchini bread recipe. It's the kind that shows up in summer when someone has too much zucchini and a loaf pan handy.

Ingredients

Wet Ingredients

  • 3 large eggs
  • 2 cups sugar
  • 1 cup salad oil
  • 2 tsp vanilla
  • 2 cups shredded zucchini
  • 8 ¼ oz crushed pineapple, drained (8.25 oz can)
  • 1 cup walnuts (optional)

Dry Ingredients

  • 3 cups unsifted flour
  • 2 tsp baking soda
  • 1 ½ tsp cinnamon
  • ¾ tsp nutmeg
  • ½ tsp baking powder

Instructions

  1. 1.Preheat the oven to 350°F. Grease and flour two 8×4 loaf pans.
  2. 2.In a bowl, sift together the flour, baking soda, cinnamon, nutmeg, and baking powder. Set aside.
  3. 3.In a large mixing bowl, beat the eggs until frothy.
  4. 4.Add the oil, sugar, and vanilla, then beat until the mixture becomes thick and slightly foamy.
  5. 5.Stir in the shredded zucchini.
  6. 6.Add the crushed pineapple, walnuts (if using), and the flour mixture, stirring until everything is well combined.
  7. 7.Pour the batter into the prepared loaf pans.
  8. 8.Bake for about 1 hour, or until a toothpick inserted into the center comes out clean.
